Mediterranean Turkish Pide

TURKISH PIDE



Pide (pronounced pee-DAY) is a classic staple dish in Turkey. It is a flatbread traditionally cooked in clay or stone ovens. Pide is often described as Turkish pizza because it has a thin, oblong dough base (similar to pita, chapatti, or pizza crust) that is topped with your chosen filling and then it’s folded over around the edges.

Pide is also known as Turkish pizza.




Pizza Dough

Ingredients:

  1. Yeast: (2 and 1/4 teaspoons)
  2. Water: 1 and 1/3 cups is the perfect amount.
  3. Flour: 50-100gm.
  4. Oil: A couple Tablespoons olive oil adds wonderful flavor to the dough.
  5. Salt: Salt adds necessary flavor.
  6. Sugar: 1 Tablespoon of sugar.
  7. Cornmeal: used to dust the pizza pan.
Recipe:
  1. Mix the dough ingredients together by hand or use a hand-held or stand mixer. Do this in steps as described in the written recipe below.
  2. Knead by hand or beat the dough with your mixer. I like doing this by hand and you can watch me in the video.
  3. Place dough into a greased mixing bowl, cover tightly, and set aside to rise for about 90 minutes or overnight in the refrigerator.
  4. Punch down risen dough to release air bubbles. Divide in 2.
  5. Roll dough out into a 12-inch circle. Cover and rest as you prep the pizza toppings.
  6. Top with favorite pizza toppings.
  7. Bake pizza at a very high temperature for only about 15 minutes.

 Pizza Sauce:

  • firstly, slit x on bottom of tomatoes.
  • furthermore, add 6 tomatoes (slitted at bottom) into boiling water and blanch.
  • close the vessel and boil for 3-4 minutes or till the skin starts to leave from tomatoes.
  • further, peel the skin of tomatoes once they cooled completely.
  • then take 3 peeled tomatoes and blend to smooth purees.
  • chop other 3 tomatoes discarding the seeds.
  • transfer to the plate and keep aside.
  • furthermore, heat oil in a non stick tawa or heavy bottomed pan.
  • add chopped garlic and saute till they turn slightly golden brown.
  • further, saute chopped onions till they change colour.
  • then add chopped - deseeded tomatoes and cook completely.
  • mash in between so that it turns mushy soon.
  • also add prepared tomato puree (3 balanced tomatoes).
  • mix well and add basil, sugar, chilli powder, oregano, chilli flakes and salt.
  • mix well and get the sauce to a boil.
  • further, cover and simmer the sauce for atleast 5 minutes or till the sauce turns thick.
  • also add tomato sauce and butter.
  • finally, mix well and pizza sauce is ready to prepare pizzas or pastas.

Instructions:

  1. Mix all vegie with pizza sauce
    1. Veg: Basil pesto, sundried tomato, corn, olive ,jalapeno
  2. Spread pizza sauce desired.


       
      3. Full it with process cheese , cheese blend.


       4. Bake it for 10-12min.
